I still remember the first time I sat down at a small plastic table in Puerto Vallarta with a cold beer and a plate of aguachile. My mouth was on fire, but I couldn’t stop eating. It was the freshest thing I had ever tasted, and it changed my whole perspective on Mexican seafood. If you are visiting this beautiful city, you simply have to try it.
Aguachile is more than just a dish; it is a coastal tradition that perfectly captures the spirit of the Pacific. We spend a lot of time exploring the local food scene here, and aguachile is always at the top of our list. It is bright, spicy, and incredibly refreshing on a hot day.
In this guide, I want to share everything I have learned about this spicy favorite. From the different styles you will find to the best spots in town, I’ve got you covered.
What Exactly is Aguachile?
If you like ceviche, you are going to LOVE aguachile. The name literally translates to "chili water," which gives you a pretty good idea of what to expect. While ceviche usually marinates for a while, aguachile is served almost immediately.
The stars of the show are fresh, raw shrimp. They are "cooked" in a matter of minutes by the acidity of fresh lime juice. The sauce is made by blending lime juice with fresh chiles, cilantro, and salt. It is then poured over the shrimp and topped with crunchy cucumber and red onion.
We always eat ours with crispy corn tostadas. The crunch of the tostada with the tender shrimp and the spicy kick of the sauce is AMAZING. You can also find our guide to savoring the coast for more seafood inspiration.

The Different Colors of Heat
One of the coolest things about aguachile in Puerto Vallarta is the variety. Depending on where you go, you might see different colors on the menu.
Aguachile Verde (Green)
This is the classic Sinaloa-style version and our absolute favorite. It uses green chiles like serrano or jalapeño. It is bright, herbal, and has a clean heat that wakes up your taste buds.
Aguachile Rojo (Red)
If you prefer a deeper, earthier spice, go for the red. It uses dried red chiles like chile de árbol. Sometimes they even add a bit of tomato to the mix. It feels a bit richer than the green version but still packs a serious punch.
Aguachile Negro (Black)
This one is for the adventurous eaters! It usually includes soy sauce or Worcestershire sauce along with charred chiles. It has a salty, umami flavor that is totally different from the others. We find it sooooo savory and delicious.
Where to Find the Best Bites
When we are craving seafood, we always head to Old Town, also known as Zona Romantica. It is the heart of the food scene here. There are two places we highly recommend if you want the real deal.
First, you have to check out Tuna Azul. It is located upstairs and gives you a great view of the street below. Their aguachile is legendary. They use high-quality seafood and their house blends are just incredible. It is a bit more of a modern vibe, which we really enjoy.
Another great spot is Mariscos El Chendon. This place is more casual and feels like a true local marisquería. The seafood is always fresh, and the aguachile verde here is some of the best I have ever had. It is simple, honest, and very spicy!
If you want to venture a bit further, a quick ride north to 1000 Caguamas is worth the trip. Locals swear by it, and after trying their aguachile negro, I can see why. It is probably the best I’ve ever had in that style.

Why We Always Stay in Amapas
When you are planning your trip, where you stay makes a huge difference. While we love hanging out in Old Town, we think Amapas is the best place to rent. It is just up the hill from the main action, so you get peace and quiet with the most incredible views.
Amapas feels like a hidden gem. It has a more relaxed atmosphere and some of the most beautiful puerto vallarta condo rentals you can find. We love being able to walk down the hill into the Zona Romantica for a spicy lunch and then retreating back to our quiet balcony in Amapas to watch the sunset.
The condos here are modern and very comfortable. They often have big glass doors that let in the ocean breeze, which is the best feeling in the world. If you are looking for the perfect home base, we suggest checking out condo and apartment rentals puerto vallarta specifically in the Amapas area.
Tips for the Best Experience
Before you dive into a big bowl of shrimp, here are a few things we have learned from our many "research" trips:
- Check the Spice Level: If you aren't a fan of heat, ask for "poco picante." Mexican spicy is no joke!
- Go Early: The best seafood spots often run out of the freshest catch by late afternoon. Lunch is the prime time for aguachile.
- Use the Tostadas: Don't be shy! Pile that shrimp and cucumber onto a tostada and take a big bite. It’s part of the fun.
- Drink Local: A cold Pacifico or a fresh hibiscus water (jamaica) is the perfect way to cool down your palate.
If you are a solo traveler or coming with friends, exploring the food scene is one of the best ways to connect with the city. You might also want to read about how to find local secrets in PV to discover more hidden gems.

Final Thoughts
Puerto Vallarta is a food lover's paradise, and aguachile is the crown jewel of coastal Mexican cuisine. Whether you like it green and zesty or red and smoky, you are in for a treat.
We honestly believe that staying in Amapas and walking down to the local spots in Old Town is the ultimate way to experience this city. The combination of incredible food and a beautiful place to rest is what makes a vacation truly special.
I am so grateful to live in a place where such amazing food is right around the corner. If you are planning your next trip, a bowl of fresh aguachile is highly recommended!
