I have spent plenty of time in Puerto Vallarta condos, and I have learned that the best dinners are usually the simple ones. When my partner and I stay in Amapas, we enjoy cooking at home because it gives us an easy way to slow down, talk, and enjoy the space together.
Amapas is the best place to rent when you want peaceful hillside surroundings, quick access to Old Town, and a comfortable kitchen where you can prepare your own meals.
You do not need complicated recipes or a suitcase full of ingredients. With a few fresh items, basic seasonings, and a little teamwork, you can make a very good dinner in less than 30 minutes.
Start with the right condo kitchen
Before we shop for groceries, we check what the condo already provides.
A useful kitchen should have a refrigerator, cooktop, microwave or oven, cutting board, knife, frying pan, saucepan, plates, glasses, and basic utensils. A coffee maker is also helpful because it means we can start the next day without searching for supplies immediately.
Hummingbird has a practical kitchen with essential appliances and utensils, along with air conditioning, fast Wi-Fi, and a dining area that works well for two. The layout makes it easy for one person to cook while the other prepares drinks or sets the table.

Vizcarra 1 also has a well-stocked kitchen designed for simple meals. It is a compact studio, so we keep our cooking organized and use one task at a time. That actually makes dinner feel relaxed instead of turning the kitchen into a project.
If you are a digital nomad couple, a usable kitchen matters even more. You can finish a work call, make something fresh, and eat without adding another trip to your schedule.
Shop for ingredients without overthinking it
I like using a three-part grocery plan:
- Choose one main ingredient.
- Add one filling base.
- Finish with fresh toppings or a sauce.
For example, the main ingredient might be fish, shrimp, eggs, chicken, beans, or tofu. The base could be tortillas, rice, pasta, potatoes, or salad greens. Then we add ingredients such as avocado, tomato, lime, cilantro, onion, cucumber, or salsa.
In Amapas, small tiendas and local markets are useful for basics, drinks, fruit, tortillas, and last-minute items. Mini Super Amapas is also convenient for simple groceries and prepared items. For a larger shop, we prefer taking a short ride downhill or into the center rather than carrying heavy bags back up the hillside.
A short list is usually enough:
- Corn tortillas
- Eggs
- Avocados
- Tomatoes
- Limes
- Fresh herbs
- Rice or pasta
- Black beans
- Cheese
- A protein of your choice
- Yogurt or fruit for later
I also recommend buying only what you expect to use during your stay. A condo refrigerator is helpful, but it is still better to cook fresh than to fill every shelf with ingredients you may not finish.
Dinner idea one: easy fish tacos
Fish tacos are one of our favorite condo dinners because they taste fresh, cook quickly, and create very little cleanup.
For two people, we usually use two fish fillets, six small corn tortillas, one avocado, two tomatoes, one lime, and a handful of cilantro. We season the fish with salt, pepper, garlic, paprika, and a little lime juice.
First, I pat the fish dry and season both sides. Then I warm a small amount of oil in a frying pan and cook the fish until it flakes easily. Depending on the thickness, this usually takes several minutes per side.
While the fish cooks, my partner chops the tomato, avocado, and cilantro. We warm the tortillas in the same pan after removing the fish.
Then we build the tacos with the vegetables, a little salsa, and fresh lime. That is it.
The best part is that we can sit down while everything is still warm. We do not need a formal dining setup. A small table, two cold drinks, and good conversation are enough.
Dinner idea two: colorful rice bowls
Rice bowls are perfect when we want something filling but do not want to spend much time cooking.
I start the rice first because it takes the longest. While it cooks, I prepare black beans, sliced avocado, tomato, corn, and a quick lime dressing.
For the dressing, I mix lime juice, olive oil, salt, pepper, and a little chopped cilantro. If we have plain yogurt, I add a spoonful to make it creamy.
You can add grilled shrimp, leftover chicken, a fried egg, or roasted vegetables. We often use whatever is already in the refrigerator, which makes this meal flexible and easy for a longer stay.
This dinner also works well around a remote-work schedule. One person can cook the rice between meetings, and the other can prepare the toppings. Everything can be stored separately until you are ready to eat.

Dinner idea three: pasta with tomatoes, garlic, and herbs
Pasta is my reliable option when we need dinner quickly.
I boil the pasta in a saucepan while I sauté garlic and chopped tomatoes in a frying pan. Once the tomatoes soften, I add salt, pepper, olive oil, and whatever herbs we have available.
A little cheese on top makes the meal feel complete. We can also add tuna, shrimp, beans, or leftover vegetables for extra protein.
The trick is to save a small cup of pasta water before draining. Adding a little of that water to the tomato mixture creates a smoother sauce without needing many ingredients.
This meal takes about 20 minutes and leaves us with only two pans to wash. That is important because nobody wants to spend the whole evening cleaning after dinner.
Dinner idea four: a no-cook tropical plate
Some evenings, especially after a full day of work or exploring, we do not want to turn on the stove at all.
That is when we make a simple plate with avocado, tomatoes, cucumber, cheese, tortillas, fruit, and something prepared from a local market. We may add deli meat, beans, hummus, or canned tuna, depending on what we have.
This kind of dinner is especially convenient in a studio condo. We can arrange everything on one plate, sit down, and enjoy a slower meal without creating heat or extra dishes.
Fresh pineapple, mango, and lime add color and make the meal feel connected to Puerto Vallarta. I always keep a little salt and chili powder nearby for fruit.
Give each person one job
Cooking together is more enjoyable when both people have something to do.
I usually handle the stove or oven while my partner washes vegetables, chops ingredients, or prepares the table. Sometimes we switch roles. The important thing is avoiding the situation where one person does everything while the other waits.
I also recommend deciding on the meal before leaving for groceries. It saves time and prevents the classic vacation question: “What do you want to eat?”
If you are working remotely, choose dinners that allow interruptions. Rice bowls, tacos, pasta, and prepared plates can all be paused easily if a work call runs late.
Make the dining area feel special
You do not need elaborate decorations to make a condo dinner feel memorable.
We clear the table, put away our laptops, use real plates, and pour drinks into glasses instead of drinking straight from the bottle. Those small details help us switch from work mode to vacation mode.
A colorful napkin, local ceramic dish, or fresh lime wedge can make the table feel more inviting. If the condo has a view or a comfortable dining corner, we take advantage of it.

Most importantly, we try not to rush. A simple dinner tastes better when we are not checking email between bites.
Keep cleanup simple
I like to clean as I cook because condo kitchens can feel crowded once dishes pile up.
We use one cutting board, one main pan, and one saucepan whenever possible. We rinse utensils right away and soak anything that needs extra attention while we eat.
Before going to bed, we wipe the counters, store leftovers, and check that the cooktop is off. It takes only a few minutes, but waking up to a clean kitchen makes the next day much easier.
For couples staying several days, this routine keeps the condo comfortable and prevents food odors from lingering.
My favorite simple dinner plan
If I had to choose one easy meal for a couple arriving in Amapas, I would buy tortillas, fish or shrimp, avocado, tomatoes, limes, cilantro, and a jar of salsa.
That combination gives you tacos for dinner, avocado and eggs for breakfast, and fresh toppings for a quick lunch. It is flexible, colorful, and easy to prepare in a small kitchen.
Amapas makes this style of travel especially enjoyable. We can work during the day, shop for fresh ingredients, cook a relaxed dinner, and still walk downhill later for coffee or a meal out.
But best of all, we get to return to a quiet condo that feels like our own space.
