Since we moved here, my favorite thing to do on a Saturday morning is head straight to the local markets. There is something SOOO special about the smell of roasted chiles and fresh cinnamon hitting you the moment you walk through those gates.
If you are a solo traveler or even visiting with a group, cooking in your own kitchen is the best way to really feel like a local. I LOVE the energy of the markets in Puerto Vallarta, and honestly, the spices you find here are on a whole different level than anything you get back home.
Where We Shop for the Good Stuff
We usually start our morning in Old Town, which some people call Zona Romantica. It doesn’t matter what you call it, the vibe is AMAZING and the food is even better.
The Mercado Municipal is a must-visit if you want that authentic experience. It’s right by the river and it is packed with everything from fresh fish to massive piles of colorful spices.

We also spend a lot of time at Mercado Emiliano Zapata. It feels a bit more like a neighborhood spot where the local families shop. You can find the most incredible dried chiles there, and the vendors are always so happy to help you pick the right ones.
If you want to be close to all this action but still have a quiet place to retreat to, I think Amapas is the absolute best area to stay in. It is just a short walk from Old Town, but it feels like a private jungle escape.

Setting Up Your Kitchen in Amapas
There is nothing better than bringing a bag full of fresh spices back to a modern kitchen. Most of the condos in Amapas have these beautiful, open layouts that make cooking a total dream.

The Essential Spices You Need to Try
You cannot leave the market without a few staples. First on my list is always the dried chiles.
Guajillo chiles are my absolute favorite because they aren’t too spicy, but they have this deep, fruity flavor that is just SO good. If you want some heat, grab some Chile de Árbol, but be careful because those little guys pack a punch!!!!
Then there is Mexican oregano. It’s different from what you usually find in the US because it has a bit of a citrusy kick. I put it in almost everything, especially my bean dishes and salsas.

And you have to get some real Mexican cinnamon (canela). It’s soft and flaky, and it smells like a dream. We use it to make Café de Olla in the mornings, which is just coffee brewed with cinnamon and a bit of raw sugar. It is the BEST way to start the day.
A Simple Market-to-Table Recipe: Spiced Shrimp Tacos
One of our go-to meals when we are staying in the area is spiced shrimp tacos. It’s so easy and uses everything you can find in a quick morning market run.
First, we go to the fish counter and get some fresh Pacific shrimp. Then we head to the spice stall for some cumin, paprika, and that amazing Mexican oregano.

Here is how we do it:
- Peel and devein the shrimp.
- Toss them in a bowl with plenty of minced garlic, lime juice, cumin, paprika, and a big pinch of oregano.
- Let them sit for about 20 minutes while you make a quick salsa.
- Sauté them in a hot pan for just a few minutes until they turn pink.
- Serve them on warm corn tortillas with some shredded cabbage.
It is so simple but the flavors are just WOW. You really can’t beat the freshness of ingredients bought just a few hours ago.
Tips for Navigating the Markets
If it’s your first time, the markets can feel a bit overwhelming, but don't worry! Everyone is super friendly.
I always suggest bringing small bills because some of the smaller spice stalls can’t always change a big note. And don't be afraid to ask questions!
We usually ask the vendors, "¿Cómo lo preparo?" which just means "How do I prepare it?" They almost always have a secret family recipe or a tip that makes the dish ten times better.
