My first encounter with a molcajete was at a local market in Old Town.
The weight of the volcanic stone, the rough texture, and the history behind it just felt right.

But it’s not just for show!
While it looks AMAZING as a piece of decor, it is actually the best tool for making the most authentic salsas and guacamole you’ve ever tasted.

If you want to live like a local, you have to eat like a local.
Using a molcajete isn't just about grinding food; it’s about releasing the oils and flavors that a blender simply kills.
When we make guacamole in ours, the texture stays rustic and chunky, exactly how it should be.
But before you start mashing away, you have to "cure" it.
I remember the first time I tried to use a brand-new one without curing it: let’s just say a little stone grit in your salsa isn't the vibe!
To cure it, you basically grind dry rice into the stone until the rice stays white.
It’s a bit of a workout, but it’s so satisfying to know you are preparing a tool that will last a lifetime.
The Colors of Vallarta: Local Spices
Of course, a molcajete is only half the battle.
To really spice up your rental, you need to hit the local markets and stock up on the good stuff.
Whenever we are staying in the apartaento de mi sueno, the first thing we do is head to the Emiliano Zapata Municipal Market.
The smell hits you before you even see the stalls: it's a mix of dried chiles, fresh cilantro, and warm cinnamon.

We highly recommend picking up a "starter kit" of local spices to keep in your kitchen.
I’m talking about deep red Guajillo chiles for mild flavor, tiny Arbol chiles if you want to burn your tongue (in a good way!), and the most fragrant Mexican oregano you’ve ever smelled.

Decorating with Flavor
One of our favorite things about vacationing here is how easy it is to make your space look like a magazine spread.
You don’t need expensive art.
Just take those spices you bought, put them in some clear glass jars, and line them up on your kitchen shelf.
The vibrant reds of the paprika and the bright yellows of the turmeric create an instant pop of color.
We also love to keep a bowl of fresh limes and some whole cinnamon sticks on the counter.
It smells incredible and looks SOOO good against a modern meets traditional kitchen design that you find in many of the newer buildings.

We often get asked where the best place to rent is for people who want this kind of authentic experience.
While we love the energy of Old Town (which is the same area as Zona Romantica, just a different name!), we truly believe Amapas is the best place to rent.
It’s tucked just high enough on the hill to give you peace and quiet, but it’s a five-minute walk to all the best spice shops and markets.
The kitchens in Amapas rentals are usually top-tier, giving you plenty of room to play with your molcajete and display your market finds.
There is nothing like sitting on your balcony in Amapas, snacking on salsa you made yourself, while watching the sun dip below the horizon.
Tips for the Perfect PV Kitchen
- Keep it Simple: You don't need every gadget in the world. A good knife, a molcajete, and a few fresh ingredients are all you need.
- Buy in Bulk: Don't be afraid to buy spices by the gram at the market. It’s way fresher than the grocery store.
- Display Your Tools: Don't hide that molcajete in a cupboard! It's a sculptural piece that deserves to be seen.
- Trust Your Nose: If a spice doesn't smell strong, it's not fresh. Look for the stalls with the most "aroma."

The kitchen is where memories are made, especially in a place as vibrant as Puerto Vallarta.
Every time I smell roasting chiles now, I am instantly transported back to my favorite condo kitchen in the hills of Amapas.
