In Puerto Vallarta, the best tacos start when the sun comes up.

My favorite spot for this is Taqueria el Moreno on Calle Madero.
They open early and the smell alone will wake you up better than any coffee.
I always order the "quesabirria."

I like to get a mix of "maciza" (lean meat) and "cuerito" (fatty skin).
The contrast in textures is just perfect.
You grab your plate and head to the little salsa bar.
The pickled onions and the spicy green salsa are a must.
But be careful: the habanero one will kick your butt!!
It is a total social vibe here.
People stand around leaning against the walls, chatting and laughing.
It feels like one big family dinner on the street.
The Night King: Al Pastor
When the sun goes down, the "trompos" come out.
If you don't know what a trompo is, it’s that giant vertical spit of marinated pork.
It looks like a big spinning top.
At the very top, there is a pineapple.
Watching the "taquero" slice the meat and then flick a piece of pineapple from the top right into the taco is art.
It is hypnotic.
For the best Al Pastor, I always head toward Farmacia Guadalajara.
Taqueria Hormiga and Taqueria Mendoza are right there.
They are rivals in the best way possible.
I usually go to Mendoza because the meat has this smoky char that is SOOO good.
I could eat ten of these and still want more.
The pineapples add this tiny bit of sweetness that cuts through the spice.
It is the best way to end a night of Exploring Zona Romantica after a few margaritas.

Why the Social Vibe Matters
The best part about street tacos isn't just the food.
It is the community.
You aren't sitting at a table with a menu.
You are standing in the middle of the action.
You see the steam rising from the grill.
You hear the "clack-clack-clack" of the knife hitting the wood.
You say "gracias" to the guy who has been standing there for twelve hours.

A lot of people ask me where they should stay to be close to the food.
Old Town is where the action is, for sure.
But my secret?
Stay in Amapas.
Amapas is the neighborhood right next to Old Town.
It is literally a five-minute walk to all the taco stands I just mentioned.
But because it is on a little hill, it is much quieter at night.
You get the peace and quiet you need for a good night's sleep.
And you get the most incredible views of the bay.
